Gooseberry Coconut Cake

Hey there! We've got a mouth-watering treat to share with you that's perfect for the summer vibes. It's time to dive into the goodness of a Gooseberry Coconut Cake that will leave you craving for more!

So, grab your apron and let's gather our ingredients:

· 125g of butter (yum!) · 125g of caster sugar (dose of sweetness) · 3 large eggs (bring on the fluffiness) · 75g of plain flour (keeping it classic) · 75g of desiccated coconut (hello, tropical twist!) · 3/4 tsp of baking powder (the rising star) · 300g of tangy gooseberries (a burst of summer flavour) · 3 tbsp of caster sugar (extra sweetness, please) · 30g of flaked almonds (crunchy goodness) · Icing sugar for that irresistible dusting

Now that we have our ingredients ready, let's dive into the baking adventure:

1. Prepare those delightful gooseberries by removing their tops and tails. Then, toss them together with 3 tablespoons of caster sugar. Sweeten them up nicely! 2. Preheat your oven to a toasty 190°C (375°F). We're getting ready to bake this cake to perfection! 3. Grease a 7" cake tin. We don't want any sticky situations later on. 4. Time to work our baking magic! Cream together the butter and sugar until they become a fluffy dream team. 5. Crack those eggs and add them to the mix. Whip it all up until it becomes smooth and velvety. 6. Introduce the plain flour, baking powder, and desiccated coconut to the party. Mix it all together until you have a delightful cake batter ready to go. 7. Spoon that luscious batter into the greased cake tin. Spread it out evenly, creating a delicious foundation for our gooseberries. 8. Now, it's time for the star of the show! Top your cake batter with the sweetened gooseberries. They'll bring that tangy zing that makes this cake truly special. 9. Pop that cake tin into the preheated oven and let it bake for a tantalizing twenty minutes. The aromas will start to fill your kitchen, teasing your taste buds. 10. After those twenty minutes, it's almond time! Sprinkle those flaked almonds over the cake, adding a delightful crunch. 11. Put the cake back in the oven for another fifteen minutes. This will give the almonds a chance to toast and add that extra layer of deliciousness. 12. Once your cake has achieved a golden perfection, let it cool down. Patience, my friends! It'll be worth the wait. 13. When it's finally cooled, carefully remove the cake from the tin. Now, here comes the fun part—dust the top with some icing sugar. It'll give it a beautiful, sweet finish that will make your taste buds sing.

And there you have it —a tantalizing Gooseberry Coconut Cake that's begging to be savoured this summer! It's a delightful combination of tangy gooseberries, tropical coconut, and the perfect touch of sweetness. So go ahead, slice yourself a piece and enjoy the flavours of the season. Happy baking!

When this arrived in my inbox yesterday, I just had to go out and pick the remaining gooseberries - it sounded like such a great way to celebrate the final batch of berries - they were not wasted - this cake is delicious - you really should try it! Thank you ladies!
